Rewarded with a biodynamic certification in 2004, the estate Bénédicte & Stéphane Tissot offers a immense amount of cuvées (about 50), with minimalistic intervention. Indigenous yeasts and limited SO2 make all the difference when tasting their wines. They use a broad array of grapes too, like Chardonnay, Savagnin, Pinot Noir, Trousseau, and Poulsard, witht the same delight every time the wine hits the lips.
La Mailloche is a small plot of 1000 square foot, with soils of clay and limestone. Smoky aromas on the nose are surprising, they are quickly followed by nutty touches and orange peel. The minerality is breathtaking, the mouth shows great power and lenght. This surely is one of the greatest whites from the estate, if not from the Jura
