The Estate
Fabien JOUVES comes from an old peasant family in Causse. He became a winemaker in 2006 by creating the Mas del Périé on the highest slopes of Cahors.
Malbec (Côt) is the king grape variety. Due to the location of the estate at the junction of the Quercy’s terroirs hillsides and those of Cahors, the plot selection was obvious to express the different facets of Malbec. This expression of the terroir is reinforced by a bio-dynamic agriculture respectful of life, the plant, man and its environment.
The vinification of the grapes in the cellar is done naturally without any oenological input, and the process of the wine until its maturity, in concrete vats, barrels and casks according to its personality.

Sommet de coteaux, 350 mètres d’altitude
VINIFICATION : Vendanges manuelles et vinification naturelle. Egrappage, cuvaison 30 jours. Fermentation en cuves béton
ÉLEVAGE : Elevage en cuves béton durant 6 mois
Tasting
Un Cahors peu conventionnel, délicat, aux arômes de fleurs délicates et petits fruits rouges. Peu concentré, ce vin déconcerte, par son toucher de bouche soyeux, ses tanins discrets, et sa longueur.
