On the tiny AOC Palette, 4 kilometers away from Aix-en-Provence, stands the myth Château Simone, owned by the Rougier family since 1830. The 23 hectares are planted with clairette, grenache, ugni, muscat for the whites, and for the reds and rosés you will find grenache (red), mourvèdre, syrah and cinsault. The vinification process is made with indigenous yeasts.
The whites from Simone show exceptional aging potential, as shown by the bright golden color in the glass after a few years in the cellar. Almonds and nutty aromas pair with fresh citrus, showing great vivacity on the palate, where some oxydative notes bring complexity.
