The Estate

The Wine
The vinification of Vin Jaune from Château de l'Étoile begins with a classic alcoholic fermentation of Savagnin, followed by malolactic fermentation. The wine is then placed in used oak barrels and aged without topping up for six years and three months. A veil of natural yeasts forms on the surface, limiting oxidation and developing complex aromas. Finally, the wine is bottled in a 62 cl clavelin.
Tasting
On the nose, powerful aromas of walnut, curry, spices, and dried fruits are elegantly expressed. The palate is full-bodied, marked by bright acidity and exceptional length. Its oxidative character and aromatic complexity make it a wine with great aging potential, perfect for bold gastronomic pairings.
