The Estate
Domaine Vincent Dauvissat is one of the oldest and most respected estates in Chablis. Founded in the early 20th century by Robert Dauvissat, it experienced major growth under the leadership of his grandson, Vincent, who joined the estate in the 1970s. True to its artisanal philosophy, the Dauvissat family has always favored discretion and precision over trends and fashion. Over the decades, the estate has built a reputation for excellence, largely thanks to its remarkable ability to express the authentic character of Chablis Chardonnay with unwavering consistency.
The estate covers around ten hectares, all located on the limestone slopes of the Kimmeridgian, typical of the Chablis region. These fossil-rich soils give the wines their distinctive mineral signature. The soils are worked with great care, without chemical herbicides, and yields are strictly controlled. The estate’s most emblematic plots include the Premier Crus La Forest and Vaillons, as well as the Grand Cru Les Clos — all vinified with the same respect for terroir and meticulous attention to detail.
Today, Vincent Dauvissat continues to oversee the estate with the same artisanal rigor, now joined by his son Ghislain, who is preparing to take over. The wines are still aged in old oak barrels, with natural fermentations and long maturation periods. No concessions are made to superficial modernity: each vintage reflects the character of the year and the soul of the vineyard. The bottles, rare and highly sought after, have become benchmark references among the world’s great age-worthy white wines.
The Wine
The grapes, harvested by hand at full maturity, are gently pressed before undergoing natural fermentation with indigenous yeasts. The wines are then aged in old oak barrels — never new — for approximately 12 to 18 months. No filtration is carried out before bottling.
Tasting
The nose opens with subtle notes of candied lemon, white flowers, and oyster shell. On the palate, the wine is broad and textured, driven by a saline backbone and precise acidity that extends the finish. A wine both energetic and profound — a promise of remarkable aging potential.
