The Estate
Cantina Fiorentino is located in the heart of Salento, between the rocky landscapes of the Adriatic and the sandy expanses of the Ionian Sea. It was founded in 2014 in Galatina, in the province of Lecce, incorporating the historic Cantina Valle Dell’Asso.
Led by Pierantonio Fiorentino, an entrepreneur in the field of renewable energy and bio-sustainability, the company produces exclusively organic wines, committing to respecting and preserving its environment. It minimizes fossil fuel consumption through buildings and facilities with very low energy consumption.
On one side, the former Folonari factory – from which, at the beginning of the 20th century, must and blended wines were shipped to other Italian regions – whose restoration revealed several vats used for vinification and aging.
On the other side, the historic building of the Valle dell’Asso winery, dating back to 1920, whose acquisition in 2017 quadrupled the company's area, reaching 100 hectares of vineyards.
The Wine
Grape: 100% Negroamaro
Vinification: 12 months in stainless steel, 12 to 18 months in big orak barrels
Tasting
The Piromàfo is 100% Negroamaro. Produced only in the best years, harvested after over-ripening of the bunches on the vine. This procedure allows to have a wine with a better organoleptic expression of the characteristics of the grape.
It is a wine with a ruby red color, which when aged evolves to garnet.
The scent is complex: tobacco, leather, coffee and licorice. In the mouth it is soft and well structured, supported by tannins deriving from barrel aging.
