Having learned from the greatest natural winemakers such as Marcel Lapierre and at Prieuré Roch, Philippe Pacalet has become an expert in indigenous yeasts and non-interventionist vinification. By creating a small wine trading business with 15 hectares of vineyards, he now markets 50,000 bottles a year according to his viticulture and production methods, always in the purest respect of tradition and in a natural manner.
Based on a clay-limestone soil, the "Bressandes" climat is located on the Corton hill, north of the village of Aloxe-Corton. The old vines, averaging 65 years in age, result in a late ripening of the Pinot Noir in this parcel. After manual harvesting, fermentation is carried out using indigenous yeasts.
The bouquet, dominated by red fruits and blackberry, gives way to a velvety texture on the palate, with a full-bodied structure and remarkably fine tannins.
