The Estate

Having learned from the greatest natural winemakers such as Marcel Lapierre and at Prieuré Roch, Philippe Pacalet has become an expert in indigenous yeasts and non-interventionist vinification. By creating a small wine trading business with 15 hectares of vineyards, he now markets 50,000 bottles a year according to his viticulture and production methods, always in the purest respect of tradition and in a natural manner.

Vineyard and Terroir:

The vines used for Cornas are planted on the steep, granite slopes of the Cornas appellation. The granite soil imparts strong minerality and a unique character to the wine, while the sunny exposure allows the Syrah to reach optimal ripeness.

Organic and Biodynamic Viticulture:

Philippe Pacalet follows biodynamic practices without the use of synthetic chemicals. This approach promotes a natural balance in the vineyard while preserving the biodiversity and vitality of the soil.

Manual Harvesting:

The grapes are hand-harvested to select only the best clusters. Harvesting is often done late, allowing for fully ripe grapes, which are essential for a balanced, concentrated Cornas.

Natural Vinification:

  • The grapes are typically vinified as whole clusters, without destemming, to bring structure, freshness, and aromatic complexity.
  • Fermentation is carried out with indigenous yeasts, without adding commercial yeasts, in open concrete or stainless steel tanks. Philippe Pacalet favors a gentle extraction with moderate punch-downs and pump-overs to enhance the natural expression of Syrah’s aromas.
  • Maceration lasts about 3 to 4 weeks, allowing for a slow and complete extraction of tannins, aromas, and color.

Aging in Oak Barrels:

Cornas is aged in oak barrels previously used for other wines (thus not new) for 12 to 16 months. This method preserves the purity of the fruit without adding strong oaky notes. Pacalet prefers older barrels that do not alter the character of the wine.

Bottling Without Filtration:

The wine is bottled without filtration and with minimal sulfur addition, depending on the vintage, to preserve the wine's aromatic integrity and natural texture.

Philippe Pacalet’s Cornas is therefore a powerful and structured wine, characterized by aromas of black fruit, spices, and marked minerality. It is a deep and complex wine with excellent aging potential, faithfully expressing the unique terroir of Cornas.
